Tasting Notes
Meticulous grape selection, the use of only free run juice (no pressings), and cold fermentation contribute to an abundant spectrum of herbal and tropical aromas. Extended lees contact adds depth, texture and balance to the palate. Bottled under Stelvin (screwcap) closure.
"Although it does have typical gooseberry, capsicum and mineral flavours this wine is more about texture than flavor profile. It's a rich, mouth-filling wine with a seasoing of nutty yeast lees character for extra interest. Sophisticated and appealing wine that's a little out of the typically pungently fruity Marlborough mould." 89 points - Bob Campbell MW
“A truly stunning Sauvignon from the Highfield Estate. The carefully selected grapes are picked and sorted prior to cold fermentation. This retains the typical tropical fruit and herbal aromas associ- ated with the Marlborough region. The nose is dominated by intense citrus tones of gooseberry and passionfruit with a top note of spicy red pepper zinging straight out of the glass. Fermentation is extended on the sediment to impart additional depth, balance and texture to the wine - so often missing with some Sauvi- gnons. Highfield uses only free run juice for its wines; the rest it de-classifies; a very expensive and indulgent decision on the part of the owners, but one welcomed by Alistair.
