Fruit is handpicked and fermented in small 4 tonne stainless steel fermenters. Alcoholic fermentation is completed within 10 days and this is followed by a post- ferment maceration on skins for up to a further 7 days. The wine is then pressed out into French Oak 'botti' where it completes malolactic fermentation and is matured for up to 14 months. The end result is a medium to full bodied wine that shows good fruit roundness while maintaining the savoury elements for which Sangiovese is famous. A very popular wine.

Castello di Brolio is the grand vin produced at Ricasoli. It is a regular Tre Bicchieri winner and the last release was ranked number five in Wine Spectator's Top 100 wines of 2009. Castello di Brolio is created from a meticulous selection of the best grapes from the estate's vineyards in Gaiole in Chianti. It is at least 80% Sangiovese with the balance complimentary Chianti grapes. The Brolio vineyards are situated at 250 to 450 m above sea level, facing south/south-west. The perfect exposure and excellent elevation of the land as well as the very stony soil are responsible for the quality and typicity of this wine. It is no surprise that from an intense vintage like 2007 a truly outstanding Castello di Brolio has been fashioned. It is a silky textured, extremely elegant wine with significant depth and power. Representing the apex of the Brolio terroir, it is a wine that is remarkably delicious now yet also full of promise. It will certainly develop in bottle for another decade or more.

The Riserva is only produced in favourable years from carefully selected Sangiovese grapes, with small amounts of Colorino and Cabernet. Complex, elegant wine, well structured with rich, mature fruit. Aged in oak and only released after 3 years. Well matched to mature hard cheeses, red meats and game.
