This Crémant de Bourgogne is a dry sparkling wine made using 100% Chardonnay from a single site. In this case the vineyard is a 2.5 hectare southwest facing site on limestone-clay soil; perfect for Chardonnay. The wine is aged for 18 months, very little dosage liqueur is added, minimum sulphur is used and the wine is not fined or filtered. Already the story is ahead of a lot of Champagne these days! The wine itself is a blend of Chardonnay from 2006, 2007 and 2008. It has light airy bubbles and fresh, lively elegance and finesse. The palate has plenty of floral and citrus flavours, a chalky minerality and a lovely persistent finish. Great as an aperitif or with poultry, scallops and fish.

From the same soils and blend of vintages as the Brut, the difference being the near zero-level of dosage. "The distinctively delicious NV Cremant de Bourgogne Extra Brut - a blend of Chardonnay from 2006, 2007, and 2008 - brims with tangerine, pineapple and lime. Exuberantly aromatic and vividly and lusciously citric, it is mouth-filling yet delicate, and finishes with a salt-tinged, saliva-inducing and invigorating savor. Although there is no lot designation on the label and I hesitate to review a non-vintage cuvee under those circumstances, this is so delicious it would be a shame not to give an account...".
